Maintenance: Now that I have a 300zx what can I expect to have to do to it over the next few months (years) ?
See point 19 below for what fluids to use. Also check out zhome.com
The cambelt requires replacing every 100,000km. If there is any suspicion whatsoever of the true mileage of the vehicle do it anyway. There are other things to replace at the same time water pump, all the other belts, the cambelt tensioner and guide rollers.
Replace all the rubber hoses around the engine before they burst and leave you with a cooked engine. Especially the heater hoses. The high underbonnet temperature of the car slowly cooks these with time. Replace the fuel filter. Replace the spark plugs. Replace all fuel hoses especially the one at the front of the car which joins the two sides of the injector rails together.
At least check that they are tight since they are known to leak. Clean out the radiator overflow tank. If you have gone to the trouble of replacing the auto fluid with synthetic you should consider the fitting of a new auto fluid cooler. The old one may well be partially blocked or full of sludge. Replace the air filters. If you aren't upgrading to a single cone K&N filter then at least consider using K&N flat filters in the original housing. The K&N filters can be cleaned and the high initial cost will be amply repaid over time.
Your vehicle will almost certainly require new mufflers within a year or three. Another thing to watch out for are cracked electrical plugs especially those on the injectors and towards the rear of the engine. Replacements will need to come of wrecked vehicles. The cracked plugs are caused by the plastic breaking down from the under bonnet heat. And along with cracked plugs will go corroded contacts. Also check for corrosion on the throttle position sensor contacts. If you do get around to replacing any plug housings allow yourself plenty of time and make sure you know how to use a soldering iron and heatshrink tuning. Fill the housing where the contacts are with dielectric grease to help keep the moisture out
